Hitpoints are the health of your troops (or General), and also the health of Bandits that you may be battling. When hitpoints reach zero, that troop/bandit dies, or the general is incapacitated.
By looking at the stats of a bandit, you can see the hitpoints, and calculate how many troops you will need to destroy it.

For a basic example:
2 Roughnecks | requires | 18-45 Cavalry |
(90 Hitpoints each) | Damage: 5-10
Accuracy: 80% |
The two roughnecks total 180 Hitpoints.
Worst case: We assume every cavalry hits for 5 damage, and only 80% of hits are landed. So, if exactly 80% (Four-Fifths) of hits are effective, we need to have enough cavalry to do 125% (Five quarters) the necessary damage, which would be 225. We therefore need 45 cavalry (45 cavs x 5 damage each = 225 hitpoints). As cavalry have First Strike Initiative, both Roughnecks would be dead before they have a chance to hit back, thus there would be no losses.
